    This thick and creamy silken tofu mayonnaise is a must-have condiment in your pantry! It is effortless to make and is ready in 5 minutes. This dairy-free vegan mayo is versatile and is great as a spread, dipping sauce, or dressing.

    After learning to make my own vegan mayonnaise, there is no going back to the store-bought ones! This silken tofu mayo not only tastes better and is healthier, but is also much more cost-effective than purchasing store-bought ones. You can also customize it and add whatever seasonings that sound good to you!

    💚Why you will love this recipe 

    • Creamy, silky smooth, and lucious - Unlike those made with cashews, this version uses silken tofu, which blends beautifully without being gritty. Various seasonings are also added to flavor the mayo. 
    • Simple and easy to make - This recipe is ready in almost no time and only calls for simple ingredients that you probably already have on hand! No fancy equipment is required, and you can blend it up using an immersion blender or in a blender/food processor. 
    • Incredibly versatile - Use it in any recipes or dishes that call for mayo! 
    • Stores well - This silken tofu mayo will last in the fridge for up to a week. 

    🍋What you will need 

    Ingredients needed like silken tofu, lemon juice, maple syrup, and dijon mustard.

    📃Ingredients notes and substitutions 

    • Silken tofu - I recommend going with firm silken tofu, if possible. Other kinds of silken tofu will work as well, but the mayo might be slightly runnier. 
    • Maple syrup - Provide vegan mayo with a hint of sweetness. You could substitute with other liquid sweeteners like coconut nectar or agave syrup.

    🔪How to make 

    Remove silken tofu from its container, and gently pat off excess water using a kitchen towel or napkin. 

    Place all ingredients into a blender or food processor, and blend until smooth. You could also use an immersion blender. 

    Give it a taste, adding more seasonings, if needed. Your silken tofu mayo is ready to be served.

    ✔Helpful tips 

    • Only silken tofu will work in this recipe, as it blends well. Other kinds of tofu might not blend as smoothly, yielding gritty mayo. 
    • Your tofu mayonnaise might seem runny at first but will thicken up upon chilling in the fridge for a couple of hours. 
    • Store mayonnaise in a sealed container or glass jar, and it will stay well in the fridge for up to a week. 

    ✨Variations and add-ins 

    • Spicy mayo - Add in 1-2 teaspoons of sriracha/sambal oelek, or to taste. You might need to increase the amount of maple syrup used to balance out the spice. 
    • Dried herbs - Feel free to blend in dried herbs of choice, like oregano, parsley, or Italian seasonings. I recommend starting from 1 teaspoon and adding more from there. 
    • Spices - Some spices that will work in this recipe include black pepper, onion powder, and chili powder. As their flavors are pretty intense, a tiny pinch should be sufficient. 
    • BBQ sauce - If you are looking for something different, try adding in a few tablespoons of your favorite BBQ sauce to make BBQ mayonnaise. 
    • Truffle oil - If you like truffle-flavored stuff, add in a few drops of truffle oil, and you will be amazed by how good it tastes!

    🍟How to use

    • Spread - Use it as a spread for your sandwiches or wraps. 
    • As a base for other sauces - This silken tofu mayo is pretty mild and versatile and works great as a base for creamy sauces. I love using it to make sriracha mayo.
    • Dip - You can use it as a dip for fries, potato slices, or even raw veggies like carrots and cucumbers. 
    • In cooking - Use it in any dishes that call for mayo, like this tofu sisig. 
    • Dressing for salads - Thin it out with lemon juice or water, and add more salt to taste. 

    ❔Commonly asked questions 

    Is silken tofu safe to be consumed without cooking?

    Silken tofu, or any other type of tofu, can be eaten raw without cooking.

    Can it be frozen?

    I do not recommend freezing this vegan tofu mayo. The emulsion between ingredients will break down and separate upon freezing and thawing.

    Ingredients
      

    • 1 block firm silken tofu or regular silken tofu (about 12oz/340g)*
    • 2-3 teaspoons lemon juice
    • 1 teaspoon maple syrup or other liquid sweeteners
    • 1 teaspoon dijon mustard
    • salt to taste
    • ¼ teaspoon garlic powder optional

        I would recommend weighing the end product and dividing it by 8 for the most accurate serving size as the amount will differ slightly based on the ingredients used. 🙂

        The recipe says 12 ounces of Tofu. So 8 servings would be (12 divided by 8) 1.5 ounces per serving. The other ingredients wouldnt add much in terms of weight.
