Serve it alongside sauces such as vegan teriyaki sauce, sriracha mayo, or plain soy sauce.

The air fryer is easily one of my most-used kitchen appliances. It turns traditionally higher-fat fried foods healthier and is so much easier to clean up compared to deep frying.
When testing my air fryer Portobello mushrooms, I got the idea for coated oyster mushrooms that mimic fried chicken. After multiple batches of testing, I am proud to report that this recipe is hands-down one of the mushroom dishes that everyone should try!

- Oyster mushrooms - Wipe oyster mushrooms clean with a damp paper towel instead of rinsing them, as they tend to soak up water like a sponge. This will yield sad, soggy mushrooms.
- All-purpose flour - Serves as a coating for mushrooms. Can be substituted with wholemeal flour, wheat flour, or a gluten-free blend.
- Plant-based milk - Any kind will work in this recipe, but choose an unflavored, unsweetened variety.
- Hot sauce - Optional, to add heat.
🔪How to make air fryer oyster mushrooms

Step 1: Mix milk, hot sauce, and apple cider vinegar in a bowl to make vegan buttermilk.

Step 2: Mix flour, cornstarch, and seasonings in another bowl.

Step 3: Dip mushrooms in the milk mixture, then gently shake off excess liquid.

Step 4: Dip mushrooms into the flour mixture, shaking off excess. Repeat for the remaining mushrooms.

Step 5: Arrange mushrooms in the air fryer basket without overlapping. Spray evenly with oil.

Step 6: Cook for 8-12 minutes at 180 °C/350°F, flipping them halfway through. Serve air fryer oyster mushrooms while hot.

These air-fried oyster mushrooms are a great, healthier game-day snack, alongside my tofu egg rolls and roasted black beans.
They are also great served with meaty mains such as vegan steaks and seitan chicken breast, or Asian recipes like vegan pho or green bean tofu.
❔Commonly asked questions
Gently wiping oyster mushrooms with a damp cloth or paper towel is sufficient. Grown on wood, they are relatively clean and free of dirt.
Rinsing is not recommended. Oyster mushrooms readily absorb water, which will be released during cooking, yielding soggy mushrooms. If you need to wash them, place them in a colander and rinse briefly under running water.

Crispy Air Fryer Oyster Mushrooms
Ingredients
- 7 oz oyster mushrooms cleaned
Wet ingredients
- ⅓ cup almond milk unflavored (or other unflavored milk)
- ½ teaspoon apple cider vinegar
- ½ teaspoon hot sauce optional
Dry ingredients
- ¾ cup all purpose flour or wholemeal flour/almond flour/gluten-free blend
- 2 tablespoons cornstarch
- 1 teaspoon salt
- ¾ teaspoon onion powder
- ¾ teaspoon garlic powder
- ¾ teaspoon dried oregano
- ¾ teaspoon dried basil
- ¾ teaspoon paprika powder
- ½ teaspoon cracked pepper
Instructions
- Prepare mushrooms by wiping off dirt and debris with a damp kitchen towel and separating them into individual pieces.
- In a shallow bowl, mix together all wet ingredients. Set aside.
- In a separate bowl, combine all ingredients needed for the coating.
- Dip a piece of oyster mushroom in the milk mixture, shaking off excess. Then, coat it in the flour mixture and shake off extra. Repeat for the remaining mushrooms.
- Lightly coat mushrooms with oil on both sides using a cooking spray, and place them in a single layer without overlapping (you might need to cook them in batches).
- Bake them at 180C/350F for 8-12 minutes, flipping and spraying on more oil halfway through.
- Serve them with dipping sauce of choice, and enjoy!
