This cozy and flavorful braised celery is the perfect side dish for any main! It's a simple recipe that only calls for 7 ingredients and is ready in 20 minutes.
Although I am not a fan of the texture and flavor of raw celery, I really like it when cooked! By braising it, the celery softens and absorbs tons of flavor, producing a delicious vegetable side dish.
I especially love serving it with meatier mains like my vegan roast beef or seitan steak.
This recipe is also great if you have a ton of celery to be used up! I especially love serving it as a Thanksgiving or Christmas side (alongside air fryer Portobello mushrooms and vegan beef stroganoff).

- Celery - The star of this recipe. All you need to do is separate the stalks and slice them into bite-sized chunks (I love cutting them diagonally).
- Butter - I am using vegan butter to keep this recipe dairy-free, but regular butter will also work.

- Step 1: Heat some oil in a wok or Dutch oven. Add onion and saute until translucent.
- Step 2: Add garlic next, frying until fragrant.
- Step 3: Add celery and saute for 4-5 minutes. Pour in broth and let the mixture simmer, covered for another 5 minutes.
- Step 4: Open the lid and allow to cook for 5 more minutes or until most of the broth has evaporated. Dish up your braised celery and serve!
