Microwave Mug French Toast

This microwave mug French toast is amazingly delicious, filling, and healthy. Ready in 10 minutes, it makes the perfect easy weekday breakfast!

Although this microwave French toast does not crisp up as regular French toast does, it is tasty in its own way, and the flavors are on-point. Incredibly versatile, you could pair it with anything from fresh berries to the classic maple syrup for a quick and easy breakfast!

🍞What you will need 

Ingredients needed like bread, milk, vanilla extract, ground flax, and maple syrup.

📃Ingredient notes and substitutions 

  • Bread - Any stale bread would work, but it is highly recommended that you go with sturdier bread like rye or brioche. Regular sandwich bread can be used, but increase the amount used to 1 ½ slice as they tend to be thinner. 
  • Ground flaxseed - Can be substituted with ground chia seeds or an egg if not vegan. If using an egg, reduce the amount of milk to 2 tablespoons. 
  • Milk - Any plant-based milk will work in this recipe. You could also use regular dairy milk if not vegan. 

🔪How to make 

Mix all ingredients except bread in a microwave-safe mug or ramekin. Let it sit for 5 minutes to thicken.

In the meantime, cube your bread into ½-inch cubes. 

Add bread cubes in when the mixture has thickened and gently toss to coat. Microwave for 60 seconds or until the mixture appears dry. Your mug French toast is ready to be served!

✔Helpful tips 

  • Stale bread works the best in this recipe, but fresh ones can also be used. However, to prevent soggy French toast, you can toast your bread in the toaster for a couple of minutes or in the oven at 180C/350F for 5-10 minutes to dry it out. 
  • To make this microwave French toast gluten-free, use gluten-free bread. 
  • This recipe is best enjoyed fresh, but you can refrigerate it for up to 3 days in an airtight container. 
    • To prevent it from drying out, avoid reheating it for too long. Microwave it in 10 seconds spurts or until it is warmed. 
  • Alternatively, cook mug French toast in an oven preheated to 180C/350F for 20-25 minutes. 

🍫Substitutions and add-in ideas 

  • Bread - For a chewier French toast, you can use a baguette. Cinnamon raisin bread is another great option if you like your microwave French toast to be sweeter. 
  • Spices - Ground cinnamon, nutmeg, and pumpkin spice are some great additions. However, a little small pinch should be sufficient! 
  • Chocolate chips 
  • Small pinch of salt - Further enhance the flavor of mug French toast.

  • Fresh or frozen fruits - berries, banana slices, apple cubes 
  • Maple syrup, chocolate syrup, or powdered sugar for extra sweetness 
  • Nut butter - peanut butter, cashew butter, coconut almond butter 
  • Whipped cream, a cube of vegan butter
  • Savory sides - Vegan bacon, Italian seitan sausage, vegan breakfast sausage patties, silken tofu scramble

Can I bake my French toast?

You can make this mug French toast in the oven too! Preheat your oven to 180C/350F, and bake for 20-25 minutes, or until the surface appears dry. Do remember to use an oven-safe mug or ramekin.

Which kinds of bread are best for making French toast?

Thick, sturdier pieces of bread like brioche, rye, and challah work best in this microwave French toast. However, regular sandwich bread, white or whole wheat, will also work. You should increase the amount to 1 ½ slice as sandwich bread tends to be thinner.

Ingredients
  

  • 1 tablespoon maple syrup
  • ¼ teaspoon vanilla extract
  • 1 slice thick bread preferably stale bread (see notes)

For vegan version

  • 1 tablespoon ground flax seeds
  • ¼ cup almond milk or other kinds of milk

For egg version

  • 1 egg
  • 2 tablespoons almond milk (or other kinds of milk)

Instructions
 

  • In a microwave-safe ramekin or mug, combine all ingredients, except for bread and stir to mix.
  • Let the batter sit for 5 minutes or so to thicken. (Skip this step if using egg instead of ground flax)
  • In the meantime, cut the bread into ½ inch cubes.
  • Place bread cubes into the batter and gently stir to coat.
  • Microwave for 60-90 seconds, or until the surface appears to be dry. If you are using an egg, you should microwave until the egg is no longer runny.
  • Let your mug French toast sit for 1-2 minutes, and it is ready to be served!
