Microwave Mug French Toast
Ingredients
- 1 tablespoon maple syrup
- ¼ teaspoon vanilla extract
- 1 slice thick bread preferably stale bread (see notes)
For vegan version
- 1 tablespoon ground flax seeds
- ¼ cup almond milk or other kinds of milk
For egg version
- 1 egg
- 2 tablespoons almond milk (or other kinds of milk)
Instructions
- In a microwave-safe ramekin or mug, combine all ingredients, except for bread and stir to mix.
- Let the batter sit for 5 minutes or so to thicken. (Skip this step if using egg instead of ground flax)
- In the meantime, cut the bread into ½ inch cubes.
- Place bread cubes into the batter and gently stir to coat.
- Microwave for 60-90 seconds, or until the surface appears to be dry. If you are using an egg, you should microwave until the egg is no longer runny.
- Let your mug French toast sit for 1-2 minutes, and it is ready to be served!
