    Vegan Baked Banana French Toast Mug

    These single served baked banana French toast in a mug is super easy to make and only requires 4 ingredients ! Makes a great breakfast or snack.

    If you are looking for something fuss-free to make for busy mornings, you definitely want to give this recipe a try ! The best part is, all you will need is 4 simple ingredients that you may already have on hand.

    🍞What you will need

    Ingredients needed for this recipe like bread, peanut butter, banana and oats.

    🥜Notes / Substitutions

    • Any kinds of bread will work in this recipe. ( whole wheat, white, rye etc.) Bonus if you are using bread that is slightly stale as they will soak up the wet ingredients better.
    • To make it gluten-free, use gluten-free bread and certified gluten-free oats.
    • Peanut butter can be substituted with other kinds of nut or seed butters. Almond butter, cashew butter and pumpkin seed butter are some that goes well with this recipe.
    • Make sure to use banana that is ripe and spotty.

    🔪How to make

    Preheat oven to 150c / 300f. Cut your bread into bite sized cubes.

    Start by mashing the banana until smooth. A few chunks here and there is generally ok.

    Then, stir in the peanut butter.

    Mix in the rolled oats and bread cubes. Mix until the bread is well coated.

    Transfer the mixture into 2 cups / mug / ramekin. Bake for 20 minutes, or until the tops are golden brown and crispy.

    Drizzle it with some maple syrup, then serve and enjoy !

    🍫Other add-ins

    • Chocolate chips
    • Chopped nuts
    • Vanilla extract ( about 1 teaspoon )
    • Cocoa powder ( to make it chocolate flavored )

    🍓Topping ideas

    Now it comes to the fun part - toppings ! This baked banana French toast mug is actually super versatile and will pair well with tons of toppings. Here are some of my favorites:

    • A generous drizzle of maple syrup
    • Nut butter ( Especially my favorite homemade coconut almond butter )
    • Fresh fruits like sliced bananas and berries
    • Vegan whipped cream
    • A side of your favorite plant based ice cream to make it more dessert like !
