1slicethick bread preferably stale bread (see notes)
For vegan version
1tablespoon ground flax seeds
¼cupalmond milk or other kinds of milk
For egg version
1egg
2tablespoonsalmond milk (or other kinds of milk)
Instructions
In a microwave-safe ramekin or mug, combine all ingredients, except for bread and stir to mix.
Let the batter sit for 5 minutes or so to thicken. (Skip this step if using egg instead of ground flax)
In the meantime, cut the bread into ½ inch cubes.
Place bread cubes into the batter and gently stir to coat.
Microwave for 60-90 seconds, or until the surface appears to be dry. If you are using an egg, you should microwave until the egg is no longer runny.
Let your mug French toast sit for 1-2 minutes, and it is ready to be served!
Notes
*Bread - Any stale bread would work, but it is highly recommended that you go with sturdier bread like rye or brioche. Regular sandwich bread can be used, but increase the amount used to 1 ½ slice as they tend to be thinner. If using fresh bread, toast your bread in the toaster for a couple of minutes or in the oven at 180C/350F for 5-10 minutes to dry it out.Helpful tips
To make this microwave French toast gluten-free, use gluten-free bread.
This recipe is best enjoyed fresh, but you can refrigerate it for up to 3 days in an airtight container.
To prevent it from drying out, avoid reheating it for too long. Microwave it in 10 seconds spurts or until it is warmed.
Alternatively, cook mug French toast in an oven preheated to 180C/350F for 20-25 minutes.
