This air-fried oyster mushroom recipe is our current favorite side dish! They are golden and crispy on the outside yet juicy and meaty inside. A highly versatile recipe, it is great served with Asian mains such as my tofu peanut noodles, vegetable fried rice, and Szechuan tofu in the past.
These mushrooms are also great served as a healthier game day snack, paired with sriracha mayo or BBQ sauce.

- Oyster mushrooms - They can be grey, white, or pink. You can find them in Asian groceries and farmers' markets. Oyster mushrooms can sometimes be found at your local grocery, too!
- All-purpose flour - You could substitute it with wholewheat flour, almond flour, or a gluten-free blend.
- Plant milk - Any kind will work in this recipe, but use an unflavored, unsweetened one.
- Hot sauce - An optional ingredient; omit it to make this recipe spice-free.

🔪How to make
Mix plant milk, hot sauce, and apple cider vinegar in a bowl to make vegan buttermilk.
Mix flour, cornstarch, herbs and spices, and salt in a separate bowl.
Dip each mushroom in the milk mixture, then gently shake off excess liquid.
Next, dip it in the flour mixture and shake off extra. Repeat for the remaining mushrooms.
Arrange mushrooms in the air fryer basket and spray evenly with some oil.
Cook for 8-12 minutes at 180C/350F, flipping them and spraying with more oil halfway through. Serve your air fryer oyster mushroom while warm!
Tip: Do not skimp on the oil! Ensure every surface of the mushrooms is coated with oil so they will brown evenly.
✔Helpful tips
- Prepping mushrooms - Wipe dirt off mushrooms using a damp kitchen towel, and separate the clusters into individual pieces. I do not recommend rinsing mushrooms as they absorb water and will turn soggy upon cooking.
- Cook mushrooms in batches - You will likely need to cook mushrooms in a few batches. Ensure mushrooms are arranged in one layer with minimal overlap to ensure that they brown and cook nicely.
- Cooking time - Cooking time might vary slightly depending on the brand of air fryer used and the size of your oyster mushrooms.
- Serve immediately - Air fryer oyster mushrooms taste best right after cooking and might turn soft after sitting out for a while.

Oyster mushrooms are grown on wood, so they are relatively clean and dirt-free. Gently wiping them with a damp cloth or paper towel should be sufficient.
Rinsing oyster mushrooms is generally not recommended. They absorb water, which is released upon cooking, yielding soggy mushrooms.

Crispy Air Fryer Oyster Mushrooms
Ingredients
- 7 oz oyster mushrooms cleaned
Wet ingredients
- ⅓ cup almond milk unsweetened and unflavored (or other kinds of milk)
- ½ teaspoon apple cider vinegar
- ½ teaspoon hot sauce optional
Dry ingredients
- ¾ cup all purpose flour or wholemeal flour/almond flour/gluten-free blend
- 2 tablespoons cornstarch
- 1 teaspoon salt
- ¾ teaspoon onion powder
- ¾ teaspoon garlic powder
- ¾ teaspoon dried oregano
- ¾ teaspoon dried basil
- ¾ teaspoon paprika powder
- ½ teaspoon cracked pepper
Instructions
- Prepare mushrooms by wiping off dirt and debris with a damp kitchen towel and separating them into individual pieces.
- In a shallow bowl, mix together all wet ingredients. Set aside.
- In a separate bowl, combine all ingredients needed for the coating.
- Dip a piece of oyster mushroom in the milk mixture, shaking off excess. Then, coat it in the flour mixture and shake off extra. Repeat for the remaining mushrooms.
- Lightly coat mushrooms with oil on both sides using a cooking spray, and place mushrooms in one layer without overlapping. (Hence, you might need to cook them in batches)
- Bake them at 180C/350F for 8-12 minutes, flipping and spraying on more oil halfway through.
- Serve them with dipping sauce of choice, and enjoy!
Notes
- Do not skimp on the oil - Although it is unnecessary to drown the mushrooms in oil, I do recommend thoroughly coating mushrooms using a cooking spray to ensure even browning.
- Cooking time - Cooking time might vary slightly depending on the brand of air fryer used.
