Start your mornings with a comforting bowl of millet porridge, packed with fiber and nutrients! Customize with your favorite add-ins and toppings to make it your own.
To boost the protein and make it a more satisfying meal, I love pairing it with my protein iced coffee or protein hot chocolate.

Although I love oats in any form, from chocolate protein overnight oats to banana flapjacks, I am challenging myself to try other whole grain options. And the top of my list is millet!
Like my barley porridge, this recipe is creamy, comforting, and incredibly satisfying. You can also switch up the toppings for more variety.

🥛What you will need

- Millet - a naturally gluten-free ancient grain. You can get it in most groceries, your local health food store, or online.
- Milk - I am using soy milk to keep this recipe vegan. You can opt for regular dairy milk or plant-based alternatives like almond, rice, or pea milk.
- Maple syrup - This can be substituted with other sweeteners like cane sugar or agave syrup. You can also use sugar substitutes like stevia drops or erythritol instead.

❄️Storing suggestions
Storing - Refrigerate leftover millet porridge for 3 days in an airtight container. Or portion it out using Souper Cubes (or small containers) and freeze for 3 months.
Reheating - Allow frozen millet porridge to thaw overnight in the fridge. Then heat it on the stove or in the microwave, adding a splash of water if the mixture gets too thick.

Creamy Millet Porridge
Ingredients
- 1 cup soy milk or other plant-based milk of choice (250ml)
- 1 cup water (250ml)
- ½ cup millet (100g)
- 2-3 tablespoons maple syrup or other sweetener of choice
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions
- Rinse the millet for a few times to remove the dirt and debris.
- Heat milk and water in a pan or saucepan. Once the mixture comes to a boil, add millet, and reduce heat to a gentle simmer.
- Cook for 20-30 minutes, stirring occasionally at the beginning and more frequently towards the end to prevent the millet from scorching.
- Stir in vanilla extract, cinnamon, and maple syrup.
- Remove the pan from heat, and plate up your millet porridge.
Notes
- Smoother consistency - If you prefer a smoother consistency, blend millet porridge with an immersion blender before serving.
- Cook on low heat - Cook your millet porridge over medium or low heat, stirring frequently to prevent the millet from sticking to the bottom of the pan.
- Storing leftovers - Refrigerate leftover millet porridge in an airtight container for 2-3 days, adding a splash of water or milk to thin. Serve cold, or reheat in the microwave or on the stove.
