    This vegan teriyaki soba noodles stir-fry makes a great easy weeknight dinner that is both filling and delicious! Comes together in 30 minutes and only requires a handful of simple ingredients. Chewy noodles and crunchy veggies all combined with a flavorful sauce that your family will love!

    📃Notes / substitutions

    • Soba noodles - You can swap it with other kinds of dried noodles like ramen, udon or rice noodles. Spaghetti will work too!
    • Teriyaki sauce - For a quicker version, feel free to use store-bought teriyaki sauce. But definitely make your own if you have some extra time on hand! It is totally worth making the extra effort.
    • Gluten-free - Make sure to use soba that are made from 100 percent buckwheat. Some brands use a blend of buckwheat and wheat flour, hence do check the ingredient label before purchasing.
    • Oil-free - You can use ¼ cup of water or broth to saute in place of oil. Highly recommended using a good non-stick pan or wok.

    🔪How to make

    Heat up a tablespoon of oil in a cast iron skillet or non-stick pan. Once heated, add in garlic and ginger. Saute for 1-2 minutes until fragrant.

    Next, add in bell pepper and carrot. Cook for 3-4 minutes until slightly softened.

    Then, add in mushrooms and cook until all veggies are tender.

    Lastly, stir in noodles and edamame together with teriyaki sauce. Give it a taste and add more sauce, if needed. Serve an enjoy your vegan teriyaki noodles while warm!

    ✔Helpful tips

    • Slightly undercook your noodles - This will prevent them from turning mushy and sticky when stir-frying. For me, I will cook them a minute or two less than the suggested cooking time on the package.
    • Rinse noodles under cold water after cooking - This especially holds true for soba, as it tends to clump together more easily. Rinsing will remove excess starch that cause noodles to stick together, and also stop them from cooking further.
    • Prep ingredients ahead of time and keep them around - Stir-frying is a fairly quick process, and requires constant stirring.
    • Use a large enough pan - This will help prevent ingredients from leaping out from pan during cooking.

    🌶Variations/add-ins

    • Add in a plant based protein to make teriyaki soba noodles heartier. I love adding some chopped seitan chicken, tempeh, tofu or veggie ground.
    • For a lower carb version, switch up part of or all of the noodles with zucchini noodles or spaghetti squash instead.
    • Feel free to change up the veggies used to whatever you have on hand, or veggies that are in season. Cabbage, mushrooms and snap peas will all work well in this vegan teriyaki noodles.
    • If you like yours to be spicy, throw in some chili flakes or drizzle on some hot sauce before serving.
    • Garnish with toasted sesame seeds or chopped peanuts for some extra texture and flavor!

    🥢How to serve

    This soba teriyaki noodles is pretty satisfying on its own, but you can also pair it with some Asian side dishes.

    Some sides that pairs great with this recipe include spicy gochujang tofu, vegan orange chicken, or sweet and sour chickpeas.

    As for appetizers, you can whip up some tofu rice paper rolls, or this flavorful Asian rice salad!

    ❔Commonly asked questions

    Is this dish spicy?

    No, this vegan teriyaki noodles is not spicy, and is kid-friendly. However, you can make it spicy by adding in a pinch of red chili flakes. Other than that, you can drizzle on some hot sauce or sriracha before serving!

    Why are my noodles mushy?

    If you soba noodles turned out to be mushy, chances are you have overcooked it. As we will be using them for stir-frying, it is important that you slightly undercook them. You can do so by reducing the cooking time by 1-2 minutes from what is suggested on the package.

    You should also rinse them in a colander under cold water immediately after cooking for 1-2 minutes. This is to halt them from cooking further, and to remove excess starch that cause them to clump together.

    What can I substitute soba with?

    If you do not have any soba noodles on hand, you can use other Asian dried noodles like udon, ramen or rice noodles instead. Spaghetti will also works in this teriyaki stir-fry noodles.

    How to store leftovers and are they freezable?

    Place leftover teriyaki soba noodles stir-fry in a sealed container and it will last in the fridge for 3-4 days. It is not recommended to freeze them as noodles might turn mushy upon thawing.

    Ingredients
     
     

    • 7 oz dried soba noodles *
    • 3 cloves garlic minced
    • 1 tablespoon minced ginger
    • 1 medium carrot julienned
    • 1 medium red bell pepper julienned
    • ½ cup shelled edamame
    • 5-6 mushrooms sliced
    • ¼ - ⅓ cup teriyaki sauce **
