    Ingredients needed like snow peas, soy sauce, garlic, ginger, maple syrup, and chili flakes.

    📃Ingredient notes and substitutions 

    • Snow peas - Choose sturdy ones that are free from blemishes. They can be substituted with sugar snap peas instead.
    • Soy sauce - Can be substituted with tamari or shoyu. Opt for certified gluten-free brands, if needed. 
    • Maple syrup - Other sweeteners like brown sugar, agave syrup, or coconut sugar can be used instead. 

    🔪How to make 

    Start by removing the ends and strings. To do so, trim one end and pull back the string like you would unlock a zipper. Trim the other end, and remove the string from the other side. (If you are unsure how to do it, check out this post on preparing snow peas) 

    Make the stir-fry sauce by combining soy sauce, maple syrup, and sesame oil. 

    Heat some oil in a cast-iron skillet or non-stick pan over medium-high. Once the pan is heated, add garlic and ginger. Saute until fragrant. 

    Next, add snow peas and fry for 2-3 minutes or until they have softened slightly. 

    Pour in stir-fry sauce along with chili flakes. Stir until everything is well mixed. Your Chinese snow peas stir-fry is ready to be served!

    ✔️Helpful tips 

    • Do trim the ends and remove the thin strings that line the sides of the snow peas before cooking. They are tough and can be unpleasant to chew on! 
    • Be careful not to overcook your snow peas. You will still want to retain some of their crunchiness and not be soft and mushy. 
    • Leftover stir-fry can be refrigerated for 2-3 days.

    Here are some of my favorite dishes to serve with this snow peas stir-fry - 

    • Asian dishes - vegan orange chicken, tofu in black bean sauce, Chinese braised tofu 
    • Meaty mains - Seitan steaks, vegan chicken breast, vegan BBQ ribs 
    • Rice - Brown or white rice, fried rice like this Indian fried rice or tom yum fried rice 
    • Noodle dishes - Pad See Ew, tofu yakisoba, or some creamy gochujang pasta 

    ❔Commonly asked questions

    Are snow peas and sugar snap peas the same?

    Although both peas look similar, snow peas and sugar snap peas are different. Appearance-wise, snap peas have a thicker and rounder pod when compared to snow peas. As for the taste, snap peas are slightly sweeter than snow peas.

    Do I have to blanch my snow peas before adding them to stir-fries?

    Blanching your snow peas before using them in stir-fries is unnecessary. They have a thin outer pod and cook pretty quickly.

    Ingredients
     
     

    • ½ pound snow peas
    • 1 tablespoon soy sauce
    • 1 teaspoon sesame oil
    • 2 cloves garlic minced
    • 2 teaspoons minced ginger
    • ½ teaspoon chili flakes (optional)
