Easy 10-minute Peanut Sauce Rice Noodles

These peanut sauce rice noodles are creamy, flavorful, and lightly spiced! A quick and easy noodles dish that is ready in 10 minutes. It is highly customizable, so feel free to add desired ingredients.

I like to serve my peanut noodles with spicy Asian cucumber salad and some chunks of instant pot seitan or my eggplant tofu stir-fry to make a quick yet satisfying lunch.

Featuring chewy rice noodles tossed in a rich, creamy, and slightly spicy peanut sauce, these noodles are a regular in my weekly rotation. It is especially great on busy days when I want to whip up something quick!

If you haven't yet used peanut butter as a base for creamy sauces, you are missing out. In addition to these noodles, I also enjoy using them to make my peanut tofu stir-fry, peanut noodles with tofu, and dipping sauces, such as the hoisin peanut sauce, in my tofu rice paper rolls.

💚Why you will love peanut sauce rice noodles 

  • A super refreshing cold noodles recipe that is packed with flavors
  • Ready in 10 minutes and only requires a handful of simple ingredients
  • Highly forgiving and can be customized to suit your taste
  • Naturally gluten-free and vegan!

🍜What you will need 

Ingredients needed like noodles, peanut butter, sugar, chili flakes, sriracha, and other seasonings.
  • Rice noodles (also known as rice sticks) - Come in various sizes, ranging from thin to medium and wide. Any will work, but I usually go for wider ones. Thai Kitchen's rice noodles are my go-to.
  • Peanut butter - Either crunchy or smooth, depending on your preference.
  • Sriracha and red pepper flakes - Add some spiciness to the noodles. Can be omitted to make this recipe spice-free.

✨Ingredients substitutions and add-ins

  • Noodles - Instead of rice noodles, you can also use soba, linguine, or ramen noodles.
  • Vegetables - Turn this recipe into a noodle salad by adding your choice of veggies, such as shredded cabbage, carrots, bell peppers, or edamame. Double the amount of peanut sauce to ensure ingredients are well-coated.
  • Peanut butter - Can be substituted with almond butter.
  • Fresh herbs - For a more refreshing dish, add some fresh chopped herbs such as parsley, cilantro, or mint leaves!
  • Add protein - Seared chicken breast, cooked shrimp, or plant-based protein options like my shredded tofu, vegan bologna, or vegan chicken breast are great choices.
  • Make it spice-free - Omit the chili flakes and sriracha.

🔪How to make easy peanut sauce noodles

Step 1: Cook or soak noodles according to package instructions. Then, drain and rinse it under cold water.

Step 2: While the noodles are cooking, prepare the peanut sauce by combining all the necessary ingredients.

Step 4: Serve it as it is, topped with chopped peanuts, green onion, and other desired toppings.

✅Helpful tips 

  • Do not overcook noodles - Noodles should be al dente with a slight bite. Overcooked noodles are too soft, resulting in clumpy and mushy peanut noodles.
  • Adjust the peanut sauce to your liking - Before adding the sauce to the noodles, taste it and adjust the flavor by adding more soy sauce for saltiness, vinegar for tanginess, sugar for sweetness, etc.

🍜Serving suggestions

Peanut sauce rice noodles can be served cold or at room temperature. If you prefer it warm, heat it in the microwave or on the stovetop before serving.

For toppings, I am going with the classic chopped peanuts and green onions. You can also add toasted sesame seeds or freshly squeezed lime juice for more tanginess.

To make it a meal, pair it with vegetable sides like my wakame seaweed salad, Chinese eggplant, or tofu green bean stir-fry. Tofu dumplings and vegan wontons are also good choices.

❄️Storing suggestions

Fridge - Peanut noodles can be refrigerated for 2-3 days in an airtight container. You may need to add a splash of water to loosen the noodles, as they tend to clump together when refrigerated.  

Batch-making peanut sauce - The peanut sauce is multi-purpose; hence, I recommend multiplying the ingredients to make a larger batch! Use it in stir-fries, to dress salads, or as a dip for raw veggies or my Thai fresh rolls. It will keep in an airtight container for up to a week.

?Commonly asked questions

Can I freeze peanut sauce?

Peanut sauce can be frozen for 3 months, stored in silicone ice-cube trays or souper cubes. It may separate and become slightly grainy upon thawing, but it will still be delicious regardless.

Are peanut noodles gluten-free?

This peanut sauce rice noodle dish is naturally gluten-free, provided gluten-free soy sauce is used instead of regular soy sauce.

What kind of noodles should I use to make peanut noodles?

Almond any noodles can be used to make peanut noodles. Some common choices include rice noodles, ramen, and soba. Linguine and fettuccine will also work.

Are peanut noodles spicy?

The spice level of peanut noodles will vary depending on the recipe. For this recipe, chili flakes and sriracha are added, resulting in mild to moderately spicy noodles.

If you have a low spice tolerance, I recommend halving the chili flakes and sriracha. You can always add more later!

Ingredients
 
 

  • 8 oz rice noodles or other types of noodles (dried)*

Ingredients for sauce

  • 2 tablespoons peanut butter smooth or crunchy
  • 1-2 tablespoons soy sauce or tamari/shoyu (use gluten-free if needed)
  • 1 tablespoon sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 2 teaspoons sriracha omit to make it spice-free
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon red chili flakes optional

Instructions
 

  • Cook or soak your noodles according to the package instructions. Once cooked, drain and rinse it under cold water.
  • While noodles are cooking, prepare your sauce by combining all ingredients needed. Give your sauce a taste, adding more seasonings if needed.
  • Add noodles and peanut sauce to a large bowl. Toss to mix until peanut sauce is well distributed. You might need to add a splash of water if the mixture is too dry.
  • Serve it as it is, or heat it in a pan or microwave to serve your peanut sauce rice noodles hot.

Notes

*Noodles -You can use any kind of rice noodles. Pad Thai noodles or wide rice noodles (used in pad see ew) are my go-to. You can also use other noodles like soba, ramen, or linguine.
 
Helpful tips
  • Do not overcook noodles - Noodles should be al dente and have a slight bite to them. Noodles that are too soft will turn mushy and clump together easily. 
  • Taste and adjust the sauce - Give it a taste before adding to the noodles. Add more soy sauce for saltiness, vinegar for tanginess, sugar for sweetness, etc. 
  • Serve it warm - If you prefer your peanut sauce rice noodles to be hot, heat it on stove or in a microwave. You might need to add a splash of water to loosen the noodles. 
  • Storing leftover -Leftover peanut noodles can be stored in the refrigerator for 2-3 days. Reheat in the microwave or a pan before serving, or enjoy them cold. If the noodles are clumpy, add a splash of water to loosen them up.
