These peanut sauce rice noodles are creamy, flavorful, and lightly spiced! A quick and easy noodles dish that is ready in 10 minutes. It is highly customizable, so feel free to add desired ingredients.
Cook or soak your noodles according to the package instructions. Once cooked, drain and rinse it under cold water.
While noodles are cooking, prepare your sauce by combining all ingredients needed. Give your sauce a taste, adding more seasonings if needed.
Add noodles and peanut sauce to a large bowl. Toss to mix until peanut sauce is well distributed. You might need to add a splash of water if the mixture is too dry.
Serve it as it is, or heat it in a pan or microwave to serve your peanut sauce rice noodles hot.

*Noodles -You can use any kind of rice noodles. Pad Thai noodles or wide rice noodles (used in pad see ew) are my go-to. You can also use other noodles like soba, ramen, or linguine.Helpful tips
Do not overcook noodles - Noodles should be al dente and have a slight bite to them. Noodles that are too soft will turn mushy and clump together easily.
Taste and adjust the sauce - Give it a taste before adding to the noodles. Add more soy sauce for saltiness, vinegar for tanginess, sugar for sweetness, etc.
Serve it warm - If you prefer your peanut sauce rice noodles to be hot, heat it on stove or in a microwave. You might need to add a splash of water to loosen the noodles.
Storing leftover -Leftover peanut noodles can be stored in the refrigerator for 2-3 days. Reheat in the microwave or a pan before serving, or enjoy them cold. If the noodles are clumpy, add a splash of water to loosen them up.
