These vegan crumpets are light, spongy, and have all the nooks and crannies! They are easy to make and only call for 5 simple ingredients. Highly versatile, you can top your crumpets with both sweet or savory toppings!
In a bowl, combine all ingredients together. Using a whisk or spoon, whisk vigorously for 3-4 minutes or until the batter is smooth.
Allow it to rest for 30-45 minutes in a warm spot. The surface will turn foamy.
Cooking crumpets
Grease crumpet rings with non-stick spray or oil. Heat a griddle or pan over medium-high heat.
Place crumpet rings in the pan, and pour ¼ cup of batter into each ring. (If your ring is bigger, you might need to add more batter).
Cook for 6-9 minutes or until the surface is set. Adjust the heat to prevent the bottom from browning too quickly.
Carefully remove the rings using a pair of tongs. You might need to run a knife through if your crumpets are sticking to the rings. Optionally, flip them over and cook for 1-2 minutes on the other side to lightly brown them.

*Flour - I am using all-purpose flour. Bread flour can be used, but it will yield chewier crumpets. To make this recipe gluten-free, use a 1:1 gluten-free blend. **Yeast - Instant yeast is the preferred choice. If using active dry yeast, you need to activate it first. Combine yeast, water, and sugar in a bowl, and let it sit for around 5 minutes until it starts to foam. Proceed with adding the rest of the ingredients.Helpful tips
Proofing dough in a cold climate - To ensure the crumpet batter is proofing nicely in colder weather, place it in the oven with the oven light on.
Grease the rings - Grease your rings before using them to ensure easy removal, especially if you use aluminum instead of non-stick rings.
Adjusting the heat - You might need to lower the heat if your crumpet is browning too quickly.
Storing - Crumpets can be refrigerated for 4-5 days, or frozen for 3 months. To reheat, allow frozen crumpets to thaw overnight in the fridge. You can then proceed with heating it in the microwave, oven, or toaster.
