Make vegan bubble tea at home with just 5 simple ingredients! It is cold and refreshing, making it the perfect hot-weather drink. This vegan boba is highly customizable to suit your taste!
You can either make it in the microwave or in a saucepan.
½ cup sugar, ½ cup water
In the microwave - heat the sugar solution at 30-second bursts until the sugar is fully dissolved, giving it a stir at every interval. Keep an close eye to prevent it from boiling out.On stove - Bring the mixture to a gentle simmer in a saucepan, and cook until the sugar has fully dissolved.
Cooking tapioca pearls
Bring a pot of water to a boil, and add your tapioca pearls.
¼ cup tapioca pearls
Let them cook for 5-8 minutes (according to the package’s instructions), or until the pearls are chewy.
Transfer them to a bowl of cold water, and allow them to soak until ready to use.
Brewing tea
While the pearls are cooking, brew your tea in hot water for 3-5 minutes.
1 cup water, 1 teabag
Alternatively, you can make cold brew tea. I recommend using at least 2 teabags, and cover them with 1-2 cups of water. Let it sit overnight in the fridge, around 10-12 hours.
Assemble milk tea
Strain the pearls and distribute them equally among 2 glasses and add a handful of ice.
Pour the tea, syrup, and milk on top.
1 cup soy milk
Give it a taste, adding more milk and syrup if needed. Your vegan bubble tea is ready to be served!

Helpful tips
Make tapioca pearls fresh - Boba pearls tend to stiffen and lose their chewiness fairly quickly.
Drain pearls right before using - Allow pearls to soak in cold water until ready to use to prevent them from drying out or sticking together.
