These amazing falafel tacos are filled with baked falafels and veggies, then topped with a creamy tahini sauce. A simple yet delicious weeknight dinner that is ready in an hour!
Start by making the falafels. (Note: The dried chickpeas need to be soaked overnight.)
Make the tahini sauce by combining all ingredients needed.
Heat your tortillas according to package instructions.
Assembly tacos by filling tortillas with vegetables. Place 2-3 falafels in each tacos, and drizzle on tahini sauce. Serve and enjoy immediately.

Helpful tips
To make the process quicker, you can choose to use frozen falafels, or make them out of premade falafel mixes.
Feel free to add any toppings that you fancy! Some great addition includes vegan feta, condiments like hummus and tzatziki, and chopped fresh herbs like cilantro and parsley.
Meal prep tipsAlthough these falafel tacos are best enjoyed immediately, most components can be prepped ahead of time. Falafels - They will keep well in the fridge for 4-5 days or in the freezer for up to 3 months. Hence, I recommended multiplying the ingredients to make a larger batch so you will have leftovers for another round of tacos. Vegetables - You can also pre-chop your veggies on the weekends and store them in separate containers. They will last about 3-4 days. Tahini sauce - Can be refrigerated for up to a week. Just note that it will get thicker the longer it is stored, but you can quickly thin it out with water or lemon juice when ready to use.
