Eggless Banana Oat Mug Cake

Irresistible sweet, moist and fluffy, this banana oat mug cake is great as a quick snack or dessert! It is eggless, vegan and gluten-free. Ready in 5 minutes and only a handful of simple ingredients required.

  • Lightly grease a mug or ramekin with cooking spray or oil.
  • In your mug, mash banana until smooth. Then, add in maple syrup and stir to combine.
    1 medium banana, 1 tablespoon maple syrup
  • Add in rest of the ingredients into the mug. Stir until everything is well combined, making sure that you get the bottoms too.
    ¼ cup oat flour, 2 tablespoons oats, 1 tablespoon chocolate chips, ¼ teaspoon baking powder, ¼ teaspoon ground cinnamon
  • Microwave for 60-90 seconds, or until the cake looks set and is firm to touch.
  • Let it sit and cool for a few minutes before enjoying!

Notes

Helpful tips
  • Make sure to use a mug that is big enough, as the cake will rise significantly while cooking. I am using a standard coffee mug. You can also use a ramekin or bowl, but reduce cooking time slightly by about 10 seconds.
  • Cooking time might vary depending on the types and brand of microwave oven used. If this is your first time making this recipe, I recommend checking on it at the 50 seconds mark. If it is still gooey in the middle, microwave it at 10 seconds burst.
  • Be careful not to overcook your mug cake. Once overcooked, it will turn rubbery and chewy. Hence, it is always better to undercook it slightly, rather than overcook.
  • To bake - bake banana oat mug cake for 25-30 minutes in an oven preheated to 350F/180C.
