Tom Yum Fried Rice

This tom yum fried rice is packed full of flavors and utterly delicious ! Super easy to make, happens to be vegan & can be made gluten-free.

Ingredients

  • 3 cloves garlic minced
  • 2 kaffir lime leaves roughly chopped
  • 2 Thai red chili sliced
  • 1 tablespoon tom yum paste
  • 1 medium carrot diced
  • 2 cup cooked brown / white rice ( refrigerated overnight ) **
  • ½ cup frozen green peas
  • 1 tablespoon soy sauce or tamari
  • 1 stalk green onion chopped
  • lime juice to serve

Instructions

  • Heat up a tablespoon of oil in a cast iron skillet or non-stick pan on medium high heat. Start by sauteing garlic, chili and kaffir lime leaves for 1-2 minutes until fragrant. Next, stir in tom yum paste and cook for another minute, stirring frequently.
  • Add in the carrot next. Cook until they have slightly softened, for 3-4 minutes, stirring frequently.
  • Now, add in rice, peas and soy sauce. Saute for 2-3 minutes, or until everything is thoroughly heated. Give it a taste and add more soy sauce, if needed.
  • Stir in chopped green onions, squeeze in some lime juice and enjoy !

Notes

*It is highly recommended to use rice that has been refrigerated overnight. But if you do not have any, don't worry ! Simply cook rice according to package instructions, then spread them out evenly on a tray. Let it chill in the refrigerator for at least 30 minutes before using.
You can substitute any suitable veggies in place of what this recipe calls for.
If you are sensitive to heat, omit Thai red chili.
