Vegan Tofu Chop Suey

This recipe is: 

- super flavorful and rich  - meat eaters approved - quick and easy to fix  - packed with veggies and protein

Veggies needed

- bok choy                - garlic - carrot                      - bean sprout - onion - mushroom

Other ingredients

- soy sauce                       - tofu  - shaoxing wine               - cornstarch  - maple syrup  - sesame oil 

Step 1

In a bag, place in cornstarch, salt and tofu. Toss to coat. 

Step 2

Pan fry tofu on each side for 2-3 minutes, or until most sides are golden brown. 

Step 3

Heat up some oil in a wok. Once wok is heated, saute onion until translucent. 

Step 4

Add in garlic and saute for a minute until fragrant. 

Step 5

Add in carrot and stems of bok choy. Cook until they have slightly soften. 

Step 6

Add in leaves of bok choy, mushrooms and bean sprout. Cook until veggies have softened. 

Step 7

Add in stir fry sauce, then tofu cubes. Enjoy!
