Creamy Vegan Thai Red Curry

This recipe is:

- incredibly hearty and comforting  - better than takeout - one pot and ready in 45 minutes - non-vegan approved

What you will need

- tofu                      - garlic  - cornstarch           - ginger - coconut milk        - onion - curry paste          - vegetables  

Step 1

Place tofu, cornstarch & salt in a zip-top bag and toss until tofu are well coated.

Step 2

Pan-fry tofu cubes until golden on most sides. 

Step 3

Heat up a pot or Dutch oven and saute onion until translucent. 

Step 4

Add in garlic and curry paste. Saute until fragrant.  

Step 5

Add in veggies, coconut milk and water. Cook until veggies have softened. 

Step 6

Lastly, add in pan-fried tofu before serving!
