Szechuan Tofu Vegetables Stir-fry

This recipe is:

- healthy and wholesome  - packed with colorful veggies  - savory, rich and delicious  - an easy one-pan meal

Ingredients needed

- tofu                         - cornstarch  - red pepper            - dried chili  - onion                       - garlic  - green onion          

Ingredients needed

- rice vinegar          - Szechuan pepper       - sesame oil            - sugar  - soy sauce  - coconut sugar 

Step 1

Place tofu cubes, cornstarch and salt in a bag and toss to mix. 

Step 2

Pan-fry tofu on each sides until most sides are golden brown.

Step 3

Start by sauteing onion for 2-3 minutes until translucent.

Step 4

Add in dried chilies, ginger, garlic, and Szechuan pepper and saute for a minute. 

Step 5

Add in red pepper and saute for 3-4 minutes until tender.

Step 6

Add in cooked tofu, green onion and sauce. Toss to combine. Serve and enjoy!
