Banana steel cut oats cookies

This recipe is:

- incredibly chewy and moist! - easily portable - easy to store and freezable - filling and hearty

Ingredients needed

- steel cut oats        - baking soda - banana                   - maple syrup - peanut butter       - chocolate chip - cinnamon               - baking powder - oat flour                   - vanilla extract

Step 1

Cook the oats with 2 ¼ cups of water, cook for 12-15 minutes until the oat mixture is quite dry as shown.

Step 2

Preheat oven to 180C/350F. Line a baking sheet with parchment paper. Mash bananas until smooth

Step 3

Add in peanut butter, maple syrup and vanilla extract. Mix well.

Step 4

Add in rest of the ingredients and mix until everything is well incorporated.

Step 5

scoop out about 2-3 tablespoons of mixture. Slightly flatten it using the back of a spoon.

Step 6

Bake for 12-15 minutes, or until they appear to be set.
