Creamy Pumpkin Potato Soup

Ingredients needed

- onion                  - pumpkin - potato                 - garlic - broth

Step 1

Heat up some oil in a Dutch oven and saute onion until transluscent.

Step 2

Next, toss in garlic and saute for another 1 minute until fragrant.

Step 3

Add potato, pumpkin and broth. Bring the mixture to a boil, then lower heat to a simmer.

Step 4

Cook for 10-15 minutes, or until both potato and pumpkin cubes have softened.

Step 5

Remove from heat and puree the soup either by using an immersion blender or in a blender.
